Ingredients:

4 cups fresh rhubarb, chopped

3/4 cup sugar

2 tbsp flour

1/2 cup butter

3/4 cup brown sugar

3/4  cup oatmeal

3/4  cup flour

Directions:

Preheat oven to 350 degrees (f).

Mix rhubarb, sugar, and 2 tbsp flour in the bottom of a 9×9 baking dish.

Cream butter and brown sugar in a bowl. Add oatmeal, and flour, mix, and sprinkle on top of rhubarb.

Bake for 45 minutes.

Ingredients:

1 cup (dry) oatmeal (I used old-fashioned oats)

1 cup toasted coconut flakes

1/2 cup chocolate chips

1/2 cup peanut butter

1/2 cup ground flaxseed

1/3 cup honey

1 tsp. vanilla

Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. (Mine were about 1? in diameter.) Store in an airtight container and keep refrigerated for up to 1 week.

Makes about 20-25 balls.

Substitution ideas can abound for just about any of these ingredients! Substitute in your favorite nut butter (almond butter, sunflower seed butter, etc.) for the peanut butter. Add in some wheat germ in place of some or all of the flaxseed.

Some other fun substitutions for the chocolate chips (or an addition to them) could include: chopped dried fruit (apricots, dates, raisins, etc.), dried berries (cranberries, cherries, etc.), chopped almonds, pecans, or sunflower seeds, other chips (butterscotch, dark chocolate, milk chocolate, etc.)

1 c. chopped dates

1 tsp. baking soda

2 eggs

1 tsp. salt

1 c. sugar

½ c. shortening

1¼ c. + 2 tbsp. flour

¾ tsp. baking soda

Cover dates and 1 tsp. baking soda with 1½ c. boiling water.  Let cool.  Cream sugar, shortening and 2 eggs beaten.  Add cooled date mixture.  Mix flour, ¾ tsp. baking soda and salt.  Add to date and sugar mixture.  Pour into greased and floured 9 x 13 cake pan.

 Topping:

½ c. chopped nuts

½ c. sugar

6 oz. chocolate chips

Sprinkle over top of cake before baking (be sure to sprinkle sugar on last).  Start baking at 375°.  After it starts baking, cut to 350°.  Bake 30-40 minutes.

2 pounds fresh strawberries, washed
3 1/4 cups whipping cream, divided
1/3 cup confectioners sugar
1 teaspoon vanilla
1/2 teaspoon rosewater (optional)
4 sleeves (about 19 ounces, or 24 to 28 whole crackers) graham crackers
2 ounces dark chocolate, finely chopped

Take out a few of the best-looking strawberries and set them aside for the garnish. Hull the remainder of the strawberries and slice each berry into thin slices.

With a hand mixer or in the bowl of a stand mixer, whip 3 cups of cream until it just holds stiff peaks. Add the confectioners sugar, vanilla, and rosewater (if using) and whip to combine.

Spread a small spoonful of whipped cream on the bottom of a 9×13 inch baking pan, or a similarly-sized platter. Lay down six graham crackers. Lightly cover the top of the graham crackers with more whipped cream, and then a single layer of strawberries. Repeat three times, until you have four layers of graham crackers. Spread the last of the whipped cream over the top and swirl it lightly with a spoon. Add a few more strawberries.

To make the ganache, heat the cream until bubbles form around the edges, then pour over the chopped chocolate. Let it stand for a few minutes, then whisk until the mixture is thick and glossy. Drizzle this over the layered dessert with a spoon, or transfer to a squeeze bottle and use that to drizzle.

Refrigerate for at least four hours, or until the crackers have softened completely. Garnish with additional berries.

1/3 cup soy sauce

1/2 cup olive oil

1/3 cup fresh lemon juice

1/4 cup Worcestershire sauce

1 1/2 tablespoons garlic powder

3 tablespoons dried basil

1 1/2 tablespoons dried parsley flakes

1 teaspoon ground white pepper

1/4 teaspoon hot pepper sauce (optional)

1 teaspoon dried minced garlic (optional)

Directions

1. Place the soy sauce, olive oil, lemon juice, Worcestershire sauce, garlic powder, basil, parsley, and pepper in a blender. Add hot pepper sauce and garlic, if desired. Blend on high speed for 30 seconds until thoroughly mixed.
2. Pour marinade over desired type of meat. Cover, and refrigerate for up to 8 hours. Cook meat as desired.
